Rudolph cupcakes

We made these Rudolph mincemeat cup cakes last week. This is a great way to use up any left over mincemeat from the Christmas cake or pudding. The mincemeat makes the cupcakes have a more festive taste without being as rich as a whole mince pie or fruit cake – so perfect for children. The twiglets are just decoration though as they don’t taate particularly nice with the cake.

4oz butter
4oz caster sugar
4oz self raising flour
2 eggs
5oz mincemeat

For decoration:
butter icing
brown food colouring
Mini marshmallows
Black icing
Glace cherry

Mincemeat Cupcake

Preheat oven to 180/ Gas mark 4

Mix all the cake ingredients until smooth. Bake the cakes for 20 mins.

Once cooled, decorate using the butter icing. Add twiglets for antlers, a cherry for the nose. Put dots using the black icing in the middle of the marshmallows for the eyes.
