I am joining in with Around the world in 12 Dishes this way. They are currently visiting French Polynesia, and as this is such a stunning destination I thought it would be a good place to hop on board. And yes I did have to look up French Polynesia – my geography is shocking.

For our recipe I decided to make Polynesian chicken. This looked a lot like things we often eat at home as the girls are fans of chicken and rice combinations. I’m not sure how authentic it is but it tasted great!
Diced Chicken Breast
1 can pineapple chunks
1/2 cup of chicken stock
2 tbsp soy sauce
3 tbsp lemon juice
1 tbsp cornflour
Sugar snap peas
1 can water chestnuts
1 spring onion
Rice to serve
What We Did
Cover the chicken with french dressing in a casserole dish and bake for 10 minutes.
Add the lemon to the cornflour slowly. Mix this with the juice from the pineapple and the soy sauce.
Pour over the children and bake for 30 minutes.
Add the pineapple, peas, and spring onions to the cooked chicken.
Serve with rice.
