Something changed when I had twins. I don’t mean that my life was thrown upside down or that I would never get a moment’s peace. I mean my tastebuds changed. Before I had twins I never drank coffee. Ever. After having them I became slightly addicted. I think it was the complete and utter lack of sleep which did it. I felt I needed that burst of energy that you can only get from coffee. I’ve always liked coffee very sweet and that is why this coffee cake recipe is the perfect treat. The hit of pure caffeine packed in sugary, buttery goodness. This is made from Nespresso compatible capsules, which give a real hit of coffee.
For the cake
100g caster sugar
30g golden sugar
125g self raising flour
1/2 tsp baking powder
1 capsule of espresso coffee
for the icing
200g icing sugar
1/2 capsule of espresso coffee
Heat oven to 190°C/375°F/Gas 5
Whisk together butter, golden syrup and eggs.
Sift the flour and baking powder. Add the coffee capsule.
Pour into a 6inch pan. Bake for 20 minutes until golden. Leave to cool
Make the icing by beating the butter with the icing sugar. Add the coffee and spread onto the top of the cake.
Grind coffee granules to a dust and lightly dust over the top of the cake.
Of course if you are drinking coffee you do not need to have coffee cake to go with it, but it certainly does taste good. I like a shot of dark espresso with the sweetness of a coffee cake.
