We have spent the summer without an oven which means I have spent a lot of time looking for no-bake recipes. We adapted a recipe found for a healthier Bounty Bar.
- 1 cup Coconut cream
- 3 tbsp of honey
- 2 cups of desiccated coconut
- 2 bars of dark chocolate
First mix the cream coconut, honey and desiccated coconut together. Spread into a greaseproof lined pan and pat down firmly. Cut into even sized bars then put into the freezer for about an hour.
Melt the chocolate and dip the coconut bars into it. Put in the fridge to set.
They taste so good. Creamy and chocolatey and really light.
We decided to pour the chocolate over the top of the bars to make them a bit healthier. This did mean they were a bit crumbly as the chocolate doesn’t encase it. Our only problem is the effect the chocolate has on Charlotte.
