Easter Bunny Gingerbread House

We love making gingerbread houses at Christmas and so when the girls wanted to make something big for Easter we decided to make an Easter bunny gingerbread house. What could be cuter? We used a simple gingerbread recipe and just adapted it for Easter and it turned out so cute and pretty.

Ingredients:

  • 6 cups of plain flour
  • 1/2 tbsp bicarb of soda
  • 4 tsp ground ginger
  • 4 tsp of cinnamon
  • 12 tbsp butter
  • 1 1/2 cups of light brown sugar
  • 2 eggs
  • 1 cup black treacle
  • water if needed to bring the dough together

To decorate

  • royal icing – 2 egg whites 1 1/3 icing sugar
  • boiled sweets
  • white fondant icing
  • mini eggs
  • green butter icing for grass

First, mix your dry ingredients. In another bowl mix the wet ingredients. Stire the two together and beat into a dough. Cover and leave in the fridge for 2 hours.

Roll the dough flat. Use templates to cut your house shapes using a sharp knife. Use Easter cookie cutters to make holes for windows.

Put the boiled sweets into a clear bag and bash with a rolling pin. Sprinkle the pieces into the window holes. 

Bake the gingerbread in the oven at 350° F, 170° C. Bake until golden, approximately 11 minutes for a large piece and 7 minutes for a small piece.

Once cool assemble your house. Make the icing by beating the icing sugar into the egg whites until stiff. Pipe the icing along each edge. You might need someone else to help keep it together. Decorate the edges with butter icing and add mini eggs. Use green butter icing to make grass. Hide some mini eggs in the grass.

Use white fondant to make Easter bunnies. They can each hold a mini egg.

Place the easter bunny outside his house. We also added some carrot chocolates.
