Mini Halloween pumpkin pizzas

Pumpkin pizza recipe

What do you do with all that pumpkin when you’ve finished carving them? There are so many delicious recipes. I blend them up and make pumpkin puree – then put that into soups, curries and pasta for the week. I love the slightly sweet taste of pumpkin – it is a lovely flavour. This year we also used the puree to make pumpkin pizzas. Yummy! The perfect treat for Halloween

Pumpkin Puree

  • 1 onion
  • the flesh of one medium pumpkin (or you can use a tin of pumpkin puree)
  • 1 tin of chopped tomatoes

What To do:

Fry the onion until golden.

Add the pumpkin and fry over a low heat for a couple of minutes

Add the chopped tomatoes. Sometimes you need a small bit of water.

Simmer over a low heat for 10-15 minutes. The puree should have thickened.

Once the puree is cooled you can use it to make a lovely pizza topping. The remainder can then be saved for the next day and warmed through with pasta and sprinkled with grated cheese.

Pumpkin Pizza

These tasty pumpkin pizzas are made with tortillas – which create a light and healthy base. They don’t take long so toddlers don’t need to wait too long.

  • pumpkin puree
  • tortillas
  • pizza toppings – we used courgette, pepper, mushrooms, sweetcorn,
  • grated cheese

Pumpkin pizzas - using a pumpkin shaped cookie cutter What To do:

We made some pizzas using a mini tortilla which was also in a circle – this meant the pizza was the size of a child’s plate.

We cut some of the tortillas into pumpkin shapes using pumpkin shaped cookie cutters. Tis makes tasty bite-sized pizza – perfect for toddlers.

Spread the puree over the top of the tortilla.

Make a pumpkin face using different vegetables – the girls all loved doing this.

Cover with cheese.

Bake in a medium oven for 10-15 minutes until golden brown.

I laid all the ingredients out to make a pizza parlour for the girls. This made it easy for them to make their own pizzas.

As you can see Molly was delighted with her pizza. They tasted yummy and were perfect for lunch. You could also add fries and salad for a dinner.
